What is açaí?

Açaí is pronounced approximately ah-sigh-EE. The accent in açaí marks the stressed final syllable in Portuguese, while acai is the common unaccented spelling used in URLs and English searches. Both spellings on this page refer to the fruit associated primarily with Euterpe oleracea.

The açaí palm produces clusters of small, round fruits with a large seed and a relatively thin edible outer layer. The harvested fruit is commonly softened and mechanically processed with water so pulp can be separated from the seed. Because fresh fruit is highly perishable, commercial supply commonly moves as frozen pulp or puree, a pasteurized product, concentrate, spray-dried powder, freeze-dried powder or a defined extract.

The word açaí does not identify one composition. An unsweetened frozen puree, a sweetened sorbet base, a retail bowl, a fruit powder and a 4:1 extract can differ in fruit percentage, water, sugar, fat, fiber, carrier, color, flavor and assayed constituents. Buyers must select the format first and then approve the exact ingredient statement and specification.

Açaí palm

What is an açaí bowl—and what determines its composition?

An açaí bowl is a finished food, not a standardized serving of one ingredient. Its nutrition, sweetness, texture and açaí content depend on the complete recipe.

A typical bowl begins with frozen açaí pulp, puree or a prepared base blended to a spoonable texture. Banana, berries, juice, milk or a plant beverage may be added to the base. Granola, fruit, nut or seed butter, coconut, honey, syrup and other toppings then change total portion, calories, sugar, fat, protein, fiber and allergens.
