Is stevia leaf powder the same as purified steviol glycosides?

No. Leaf powder, crude extracts and highly purified steviol glycosides differ in composition, sweetness and U.S. regulatory status. Request the ingredient identity, assay and regulatory documentation for the selected SKU.

How much sweeter is stevia extract than sugar?

FDA reports that certain high-purity steviol glycosides are approximately 200 to 400 times sweeter than table sugar. Actual sweetness depends on glycoside composition, concentration, product matrix and sensory method.

Can stevia replace sugar one-for-one?

No. Stevia contributes intense sweetness at a low use level but does not replace sugar's bulk, browning, texture, freezing-point, preservation or mouthfeel functions. Those properties must be rebuilt for the application.
