Food colors are materials used to impart color to foods and beverages. Selection starts with the finished-product brief and the required function. The keyword or family name is only the beginning of the specification.

Set the target with a physical reference and an instrumental color range where practical. Record the base product color, opacity, pH, heat treatment, light exposure and package. Photographs viewed on different screens are not reliable specifications for shade approval.

Choose between dissolved and dispersed color behavior. Dyes may provide clarity and high strength, while lakes or pigments require controlled dispersion and can affect opacity or sediment. Natural-source colors can be especially sensitive to pH, heat, oxygen, light, metals or reducing agents depending on identity.

Screen a dose range in the complete product and evaluate immediately after processing and through the intended shelf life. Color can migrate, ring, settle, brown, bleach or change hue after the initial batch. Packaging and distribution light should be represented in stability work.

The commercial grade should have a controlled strength and physical specification, but natural variation and analytical tolerances still require lot controls.

At the food plant, soluble colors are commonly prepared in a compatible phase while insoluble colors need adequate dispersion. Accurate low-dose weighing, clean equipment, controlled addition and cross-contact procedures are important. The process must avoid specks, streaking or uneven distribution.

Finished release can combine visual comparison with instrumental measurements appropriate to the product. Stability work considers process, package, light, oxygen and temperature.
